The Mexican Sandwich

Who doesn’t love tacos? These quick south-of-the-border sandwiches, made from tortillas (corn or flour) folded over a variety of goodies, are the ultimate in contemporary hand food. At once gourmet and quotidian, the taco can be the entree in a fancy restaurant or precious takeout from an otherwise unpromising truck stop. Considering the first tacos I ever ate were in a Greek fast-food restaurant – and I loved those – I am no taco snob, but I think the best tacos in the world are in San Francisco. In the Mission district, home to some of the city’s funkiest little nightspots, there’s a raft of top-notch taco huts that have long been satisfying people when they need tacos most – when the bars close. These taquerias, with their trays of spicy condiments and aromas of grilled pollo and rich refritos, are pure California fresh.
