Signature Drink: Tokyo Joe

The 1949 movie Tokyo Joe, starring Humphrey Bogart and Sessue Hayakawa, was the first Hollywood film to be shot in post-World War II Japan. In her ode to this tightly wound film noir, bartender Mari Kamata of the Tokyo Peninsula’s Peter Lounge Bar in Ginza – where much of Tokyo Joe was shot – has crafted a cocktail in which old-school Western highball meets Japanese tradition. Its sweet-tart blend includes Drambuie (the honeyed, herbaceous whisky liqueur was a Bogie fave) and umeshu, the plum liqueur made in Japan since the 17th century and renowned for its health benefits. Echoing the look of the Yabu Pushelberg-designed space, it’s served in a custom-made stemless martini glass, buoyed by a miniature picket fence. 

Tokyo Joe
Pour 20 ml Bombay Sapphire gin, 10 ml Drambuie, 20 ml umeshu, 40 ml cranberry juice and 10 ml lemon juice into a cocktail sha­ker. Top with ice, shake convincingly and strain.
